This toastie has pickled red onion, sweet chili sauce, chicken and Jarlsberg® - what more could you ask for?
Slice the red onion. Put the water, vinegar and sugar into a saucepan, add the sliced onion and bring to the boil. Leave to simmer for a few minutes. Slice the chicken breast and fry until the meat begins to brown and is cooked through (approx. 7 min). Spread the mayonnaise on the slices of bread. Add the Jarlsberg® cheese slices, chicken breast, pickled red onion and fresh spinach. Place the two halves together and fry the sandwich on both sides in a cast-iron pan until the cheese has melted and the sandwich is nicely browned. Mix together the sweet chilli sauce and mayonnaise and serve as a dip.
