This easy cheesy Jarlsberg® quiche topped with raspberries, radicchio and red onion is perfect for brunch.
Ingredients:
Pie Shell:
1 1/4 cups flour
3.5 oz butter (about 1/2 cup), at room temperature
3 tbsp water
1/2 tsp salt
Filling:
3 large eggs
3/4 cup milk
1/2 cup cream
5.3 oz Jarlsberg® cheese (about 1 1/4 cups, grated)
Salt and pepper (to taste)
In a bowl, knead together the flour, butter, water and salt to form a dough. Using your fingers, press the dough into a springform pan or an oven-safe tin with a high rim. Refrigerate the pan with the dough for 30 min. Par-bake the pie shell in the oven for 10 min at 200 C.
Mix the eggs, milk and cream in a bowl. Roughly grate the Jarlsberg® cheese and stir it into the mixture. Season with salt and pepper. Pour the filling into the pie shell and bake in the oven for about 30 minutes. Serve with optional toppings or simply a sprinkle of salt.
Topping tips: Radicchio, red onion, raspberries, poppy seeds, radish, thyme, mixed greens, herb oil.
