Bulgur bowl with fruits, nuts and Jarlsberg®

​A day in the summer sun is not complete without this fresh Jarlsberg® bowl filled with a delicious and nutritious mix of fruit, bulgur and Salsa Verde.

  • 400 g Jarlsberg® Original
  • 3 dl bulgur
  • 100 g strawberries
  • 300 g watermelon
  • 1 pomegranate
  • 1 dl hazelnuts
  • 2 avocados
  • 65 g arugula

    Salsa Verde:

  • 50 g mixed herbs, such as mint, coriander, parsley and basil - choose your favorites! 
  • 1 shallot
  • 1 clove garlic 
  • 1/2 green chili pepper
  • 2 tbsp olive oil
  • 2 tbsp white wine vinegar or apple cider vinegar
  • Juice of 1 lime
  • Salt and pepper
Here is how you do it

To make the Salsa Verde, start by putting all the herbs in a blender. Add the finely chopped shallots, garlic and chili pepper. Pour in the oil, vinegar and lime juice. Blend until smooth, adding more oil or a little water if it the mixture becomes too thick. Season with salt and pepper.  

Cut the Jarlsberg® into small cubes. Cook the bulgur as indicated on the package. Cut strawberries and watermelon into slices. Cut open the pomegranate and remove the seeds. Coarsely chop the hazelnuts. If you have time, briefly toast them in a pan or in the oven. Peel the avocado and cut it into wedges or slices. Serve as a salad in large bowls and top with Salsa Verde!
