It is said that this dish is so ironically French that it is one of the first items of vocabulary that many aspiring French linguists learn. Ever since it was introduced as a quick snack in French cafés and bars in the early 20th century, it’s been a favourite among sandwich lovers all over the world, and not without a reason. Just thinking about the combination of crisp, buttery bread, grated nutmeg, smoked ham, and sweet and nutty Jarlsberg® cheese lets us experience the atmospheric pavement cafés of Paris.
Here is how you do it
Make a white sauce by melting the butter in a pan and gradually adding the flour, stirring well. Gradually stir in the milk to get a smooth mixture, and add grated nutmeg, salt and pepper to taste. Boil the eggs as you like them and set aside.
Whisk together the vinaigrette ingredients. Fry the large bread slices in melted butter in a frying pan and top with the white sauce. Top the bread with the slices of ham and Jarlsberg® cheese and brown under the grill until the cheese has melted.
Serve this fabulous breakfast garnished with a few salad leaves, dressed with vinaigrette and topped with the egg.
