Here is how you do it
Cut the focaccia in half lengthwise, turn the cut surfaces upward and drizzle over a little olive oil. Halve the cherry tomatoes and cut the onion into rings. Spread butter on the bread and add the cheese. Heat in the oven for a few minutes at 390 °F until the cheese has melted. Top the bottom half with grilled pepper, tomatoes, olives, red onion rings and arugula. Finish with a little fresh thyme and put the two halves together.
