This toastie has pickled red onion, sweet chili sauce, chicken and Jarlsberg® - what more could you ask for?
Here is how you do it
Slice the red onion. Put the water, vinegar and sugar into a saucepan, add the sliced onion and bring to a boil. Leave to simmer for a few minutes. Slice the chicken breast and fry until the meat begins to brown and is cooked through (approx. 7 min). Spread the mayonnaise on the slices of bread. Add the cheese slices, chicken breast, pickled red onion and fresh spinach. Place the two halves together and fry the sandwich on both sides in a cast-iron skillet until the cheese has melted and the sandwich is nicely browned. Mix together the sweet chilli sauce and mayonnaise and serve as a dip.
