Make sure the glass jar is clean and has a tight lid. Cube the Jarlsberg® cheese and thinly slice the olive and leeks. Finely chop the oregano (or tarragon), peppercorns, and finely mince the thyme and garlic. Whisk vinegar with oil, herbs, peppercorns and garlic. Layer the Jarlsberg® cheese, olives and leeks inside the jar. Cover with marinade and seal tightly. Place the jar in the fridge to marinate for a day; best to use within 3 days at the most.
