Chef George Duran's innovative recipe takes potatoes and Jarlsberg® cheese and smash them together! Give your friends and family a new way to eat potatoes- smashed! Once potatoes are good and crispy, cover them with as much Jarlsberg® as desired and some garlic and you're ready to share!
Preheat your oven to 450°F and cook potatoes by steaming, boiling or microwaving. Set aside.
In a small saute pan or sauce pan add 4 tbsp. olive oil and garlic. Cook on medium low heat just until garlic browns and turns crispy, about 5 minutes. Strain garlic, reserving both the olive oil and crispy garlic.
Once potatoes are cooled, use the back of a pan to gently smash them down to about ½ inch thickness. Drizzle olive oil throughout a roasting pan and place smashed potatoes. Drizzle reserved garlic olive oil on top of each potato and season with salt and pepper. Roast for 20 minutes.
Remove from oven and evenly divide Jarlsberg® Cheese and parsley on top of each potato. Cook for another 10 minutes until cheese begins to brown. Top each potato with a little bit of the reserved crispy garlic and allow to cool a bit before serving.
Serves 4 as an appetizer.
