You will need

  • 200 g sliced smoked salmon
  • 200 ml sour cream
  • BLINIS
  • 25 g yeast
  • 300 g plain flour
  • 4 tbsp. lukewarm water
  • 75 g buckwheat flour
  • 500 ml lukewarm milk
  • 3 egg yolks
  • 3 egg whites
  • 3 tbsp. sour cream
  • salt
  • butter for frying
  • JARLSBERG® CHIPS
  • 50 g melted butter
  • 125 g grated Jarlsberg®
  • 30 g flour

Makes 40 blinis

A classic nibble for an elegant party

Blinis are always a delightful nibble, but these are elevated to the sublime by the unexpected addition of Jarlsberg® crisps. A definite crowd-pleaser, ideal for a sparkling new year’s party or special family celebration.

To make the blinis

Dissolve the yeast in lukewarm water, mix with 3 to 4 tbsp of plain flour and put it aside for 20 minutes until it has risen. Combine the rest of the plain flour and the buckwheat flour in a large bowl. Add the milk, yeast mixture, egg yolks, sour cream and salt and mix together. Allow it to rise for 2 to 3 hours.

Beat the egg whites until stiff and fold them into the batter. Drop small spoons of the batter into a hot frying pan to make little pancakes. Fry on both sides until golden brown. Top the blinis with sour cream and smoked salmon, and garnish with Jarlsberg® chips.

To make the Jarlsberg® crisps, preheat your oven to 180 ̊C. Mix the melted butter and grated Jarlsberg® in a food processor, add the flour and let the mixture rest in the refrigerator for 1 to 2 hours. Make small balls, about one teaspoon in size, and bake them on greased baking paper until golden brown.
