Celebrate the taste of the Mediterranean with this colorful dish that bursts with flavor. Sparked with Jarlsberg® cheese, balsamic vinegar and toasted nuts, the dish can be served as bruschetta on sliced toasted Italian bread, or as a side dish to meat, chicken or fish.
Preheat oven to 350 degrees F. Cut the tomatoes in half. In bowl, whisk together vinegar, olive oil, garlic, thyme, salt and pepper; gently mix in tomatoes. Transfer all to an ovenproof dish, turning tomatoes cut side up and bake 15 minutes. Meanwhile, gently toast the pine nuts in a pan until golden, and set aside. When tomatoes are cool enough to handle, remove their skins and return to baking dish. Sprinkle tomatoes with Jarlsberg® cheese. Return to oven and broil about 5 minutes, or until cheese turns golden and bubbly. Top with toasted pine nuts. Serves 4.
