• Mushroom Pizza •

You will need

  • 2 tbsp. extra virgin olive oil
  • 12 g dry yeast
  • 12 mushrooms
  • 1 lukewarm water
  • 500 g whole flour
  • 1 tbsp. extra virgin olive oil
  • 0.5 tsp. salt
  • extra flour to work the dough
  • 200 g tomato paste
  • 2 tsp. thyme or other herb
  • 4 tbsp. extra virgin olive oil
  • 50 ml water
  • sugar, salt and pepper
  • 4 tsp. tarragon
  • 400 g Jarlsberg
  • salt and pepper

A firm family favourite

Don’t be put off by the long ingredient list, the dough and sauce are amazingly quick and easy to put together. Besides, just make these once and you’ll probably never call out for pizza again. Apart from the irresistible, freshly baked taste, the best thing about making pizza at home is personalizing it.

As Jarlsberg originates from Norway, we’ve made ours typically Norwegian, with this season’s delicious mushrooms and Jarlsberg cheese. For a little Italian colour and flavour, try sprinkling rocket salad over the pizzas just before serving.

To make the pizzas

Starting with the dough. Mix the flour, salt and dry yeast, add the lukewarm water and knead thoroughly. (Ensure your dough isn’t too soft.) Add olive oil and continue to knead until the dough is elastic. Cover it with a cloth and place in warm place until it rises to twice its original size. The pizza dough is now ready to be punched down and shaped into 4 8-inch rounds. Preheat the oven with the baking tray inside at 250 ºC.

To make the sauce simply mix all the ingredients.

Slice and mix the mushrooms with olive oil, tarragon, salt and pepper. Spread a thin layer of the tomato sauce onto the uncooked pizzas, sprinkle the grated Jarlsberg over, and top with the seasoned mushrooms. Bake the pizzas on the preheated baking tray in the lowest level in the oven for 12 to 15 minutes, or until they are golden brown.
