Snøfrisk Pannacotta with Fresh Berries

A traditional south European dessert.

Serves 4

Pannacotta

1 tub Snøfrisk Fresh spreadable cheese (125 g)
2 dl / 1 cup whipping cream
1 dl / 1/2 cup milk
1 vanilla pod
1 lemon (and grated zest)
4 tbsp sugar
2 leaves gelatine

Soak the gelatine leaves in the milk. Slit vanilla pod and scrape out seeds. Combine cream, sugar, grated lemon zest and vanilla seeds. Bring to a boil and simmer gently for approx. 10 minutes. Strain. Remove the vanilla pod. Heat milk, Snøfrisk and gelatine  leaves gently, without boiling. Combine the milk and cream mixtures and leave to cool. Pour the mixture into glasses and chill in the refrigerator.

Berries

10 tbsp sugar
1 dl / 1/2 cup water
1 lemon
berries of your choice

Boil sugar, water, finely grated zest and juice of the lemon. Leave to cool. Clean the berries (cutting in half, if desired). Toss them in the sugar solution.
