Soup with Ridder

Onion soup with Ridder cheese. Warm and tasty meal that can be served by itself or before a main course.

Serves 4

1 onion
2 tbsp Butter
2 tbsp white flour
1 liter bouillon
3 dl / 1,2 cups grated Ridder
1 dl / ½ cup cooking cream
1 egg yolk
1 dl / ½ cup finely chopped parsley

How to do:

Peal and finely chop the onion. Fry in butter on low heat until soft. Sprinkle flour and stir. Pour the buljon and let boil for 5 minutes.

Turn off the heat. Stir in grated cheese, cream and egg yolk. Let it melt and season with salt and freshly ground pepper.

Serve in soup bowls with bread and herbs.
