Red Onion and Snøfrisk Pie

Good meals don’t have to be difficult to make. Try our pie with red onion and Snøfrisk. Serve as a snack or an appetizer.

 

Dough:

125 g / 4,4 oz butter
200 g / 7 oz fine white flour
2 tbsp water

Filling:

4 big red onion
2 tbsp butter
2 dl / 3/4 cup meat broth
2 tsp balsamic vinegar
50 g / 1,7 oz raisins
0,5 tsp salt and pepper
250 g / 9 oz Snøfrisk

Finery

20 g / 0,7 oz fresh herbs

How to do

Use one cake tin approximately 24 cm/ 10 inch or 16 muffin forms. Grease with butter.

Crumble the butter and blend with flour. Add water and work in a firm dough. Let rest on a cold place for 30 minutes.

Peal onion and cut in thin slices. Melt the butter in a frying pan over medium heat. Add onion and let simmer by low temperature. Add raisins, balsamic vinegar and meat broth. Season with salt and pepper. Let simmer for 10 minutes until the water vaporizes.

Press dough in the baking tin and bake in the oven on 200 ºC / 392 ºF for 15 minutes.

Cool down and remove from baking tin.

Add onions and scoop Snøfrisk on top. Decorate with fresh herbs.
