Smoked Jarlsberg with Apple and Fennel Salad

Smoked Jarlsberg gives this fresh salad an extra special flavour, created by the The Culinary Institute of Norway.

Ingredients

400 gr Smoked Jarlsberg (you can use other Jarlsberg types as well)
cut in large dices
1 Red apple
2 Fennel
½ Red onion
2 tbls Extra virgin olive oil
2 tbls Chives, finely chopped
½ Chilli, stones removed, finely chopped
1 Lime, juice
Salt and pepper

How to do

Divide the fennel in two and boil it in water for a couple of minutes, leave to cool. Cut the fennel and red onion in thin slices and dice the apples. Mix all the ingredients together. Add the Jarlsberg cheese.

Serve fresh on its own with bread and butter or as an accompaniment to fried or grilled meat or fish.
