Bases Ingredients:

175 gr Dairy butter 
 3 cup flour 
 1 1/2 cup grated Jarlsberg 
 6 tlbs fresh double cream 
 1/2 egg, whisked 
 1 ts cumin 
 10 almonds, chopped into thin strips


Cheese filling:

150 gr finely grated blue cheese 
 2 tbls soft Dairy butter 
 5 tbls grated parmesan cheese 
 5 tbls finely grated Jarlsberg 
 2 cup cream cheese naturel

Method

1. To make the bases: Mix the flour, cheese and butter by hand or in a food mixer into a rough dough. Add the cream and work quickly into a fine dough. Leave the dough in a cool place for at least 1 hour.

2. Divide the dough into two. Roll out into two quite thin pieces appox. 24 cm in diameter and place them on greaseproof paper on a baking tray. Prick both the pastry rounds with a fork. Brush one with egg and sprinkle with the cumin and almonds.
3. Bake the bases at 225 degrees C for 10-15 minutes until golden. Cool on a wire rack.

4. Mix the grated hard cheeses with the butter and add as much cream cheese as is necessary to form a creamy consistency. Spread the cheese filling between the pastry bases shortly before serving.
