Toast à la Victor
Serves 2
200g Ridder, finely sliced
2 slices baquette, toasted
Grape/onion chutney:
½ onion, finely chopped
10 grapes, halved
1 tablespoon oil
2 tablespoons sherry or red wine
vinegar
salt, pepper
Fried onion rings:
1 onion
1 tablespoon wheat flour
1 beaten egg
5 tablespoons breadcrumbs
oil for deep-frying
Chutney:
Fry gently onion and grapes, season with salt, pepper and add the vinegar. Let it sizzle.
Fried onion:
Cut onion into rings. Put the rings first in flour, egg and finely in breadcrumbs. Fry until golden brown.
Spread chutney on toast, cover with Ridder and top with onion rings. Decorate with chives,
if you like.
