Ridder Surprise
You will be surprised by how nice these ingredients combine.
Serves 2 - 3
250g Ridder
2 thick slices of bread
butter
4 dried figs
1 dl fruit and nuts assortment
(raisins, almond, various nuts)
45g sugar
½ dl sherry- or red wine vinegar
Cut the bread into large cubes and fry in a pan on butter until crisp. Cool down.
Cut Ridder into cubes. Cut figs in 4 pieces. /You can boil figs in a bit of water to swell and soften./
Cook the sugar and vinegar on low heat to caramelise. Add fruit and nuts assortment.
Presentation is an important part of this starter. Spread bread and cheese on a plate. Put some Ridder on the breads remainder around. Divide caramelised fruits and nuts over the cheese and the bread.
Drip some of the caramel around the plate. Fresh herbs makes this starter the ultimate temptation.
