Happy Tomato

Starter created by Tom-Victor Gausdal Norwegian Chef of the Year 2003 and silver winner at Bocuse d`Or 2005.

Serves 4

100g Ridder
4 tomatoes
2 spring onions
4 tablespoons sea salt

How to do

Bring water to a boil and deep tomatoes in for a few seconds until the peel cracks. Remove from boiling water and immediately deep into ice cold water. Remove the peel with a sharp knife.

Cut “a lid” of the top of the tomato and remove some of the inside and sprinkle with sea salt.

Cut the Ridder into thick sticks and spring onions into thin slices. Put onions and Ridder into tomatoes, close with the “lid” and decorate with herbs.
